We're seeing lots of interest in rum again, and some of the most exciting and interesting barrels we've had the opportunity to try have come from the team at Rolling Fork.
We've had a number of great barrels from Rolling Fork even just this year, and today we have an array of exciting releases and finishes that really expand across a lot of the flavor profiles rum can offer. The Jamaica is a bou-rum if I've ever had one. The Brazil is fun to see in amburana being it's also native to Brazil. It's also one of the most unique barrels we've had this year, which is why we featured it today in our 12 Days of Christmas. If you or someone you know is a rum lover, you don't want to miss this one. Last but certainly not least, the Barbados finished in Pineau des Charantes is just downright a flavor explosion. Read on to learn more about what makes these great rums so different from one another.
#HD2012-234049 11-Year Jamaica Rum Finished in Bourbon Cask 59.4%
This rum was distilled by an undisclosed distillery in Trelawny, Jamaica and it is a pure pot still rum aged in a bourbon cask. A bou-rum if I’ve every had one.
The nose is spicy, herbaceous, and rich with sticky date and grape candy sweetness.
The palate is thick and chewy, full of fresh fruits like a bowl of punch spiked with spicy bourbon with dark brown sugar notes.
The finish is long, cooling, and trailing. A fruit medley combined with wintergreen spices.
#EP2011-234056 12-Year Brazil Rum Finished in Amburana & Bourbon 52.06% This rum was aged 4 years in Amburana casks in Brazil and 8 years in bourbon casks. It was distilled by Epris Distillery on a column still from a blend of fresh cane juice and molasses base.
Softly smoked cinnamon roll meets jammy fruits on the nose.
The palate is dense and coating with dark fruit notes: grape, raisin, date, raspberry, all sweetened with a toasty vanilla cream and spiced dark chocolate ganache.
The finish goes back to smokey amburana notes of overcooked cinnamon roll, dark fruits, and dried leather. One of my favorites.
#PDC-234078 9-Year Barbados Rum Finished in Pineau des Charentes 58.8%
This gem is a 9 year Barbados - aged 8 years in Barbados in bourbon cask, aged one year by Rolling Fork in a Canton low char rye whiskey cask, and then aged 5 months in a french oak Pineau des Charentes cask.
The nose is rich molasses from the start. Light maple, deep waves of dark fruit underneath, and perfectly touched with smokey brown sugar.
Anise pops right away, like a beautiful marinaded jerk chicken. Holiday spices, thick port, and heavily charred vanilla bean.
The finish is long, creamy, and trailing with dark fruit and molasses. The finishing seems to control what could be an overly sweet rum and makes it one of the best experiences of the year.
