Penelope’s Cooper Series is all about the art of cask finishing, where straight whiskey meets extraordinary barrels sourced from around the world.
Rio is one of the clearest examples of that approach. This straight bourbon is finished first in American honey barrels, then in new Amburana barrels from Brazil. Since first released in 2023, the two make perfect dance partners, rich and sweet, with surprising depth creating a whiskey layered with warmth, sweetness, baking spice, and toasted oak.
Bottled at 98 proof and non chill-filtered, Rio brings together a mash bill of 74% corn, 16% wheat, 7% rye, and 3% malted barley with one of Penelope’s most recognizable finishing profiles.
The nose opens with vanilla, toffee, graham cracker, and floral honeycomb. The palate follows with honey nectar, cinnamon sugar, vanilla, and baking spices before finishing with cinnamon, toasted oak, and honeyed pastry.
