Welcome to round 3 of Breaking the Seel! Penelope Bourbon Private Select is a series that explores new and unique expressions of Penelope's signature four-grain straight bourbon whiskey. For this release, we partnered with Breaking Bourbon to create a unique, private blend of bourbon. We started by selecting three barrels. Each barrel was from a different mash bill. There was a 21% rye bourbon, 45% wheat bourbon, and 99% corn bourbon.
After the barrel selection, we submitted four different blend options. After rounds of debate, we landed on a blend that was Corn 80%, Rye 12%, Wheat 5%, Malt 3% You can watch the full tasting here. After the final blend we added another spin for the third Breaking the Seel! We let is finish in a char #2 Heavy Toast barrel for 7-months.
