Old Dominick 7-Year Single Barrels

Old Dominick is no stranger to Seelbach's, we've been doing picks of Huling Station for years. That was back when they were contract distilling. 
Old Dominick started laying down barrel in 2013. There was a barrel shortage at the time, but they worked closely with MGP to develop their own mash bills and whiskey profiles. Fast forward to today and we are excited to have our first single barrels distilled by Old Dominick in Memphis, Tennessee, and both at 7-years old. These are more great examples of well done craft whiskeys at a great price point!
 
First we have a Single Barrel Bourbon that is 52% corn, 44% rye, and 4% Malted Barley. With a high rye recipe like that, you're bound to find some unique flavors that you won't find anywhere else.

The nose is captivating with smoked red fruits and creme brulee topping, followed by peach, plum, soft cracked black pepper, sweet oak and petrichor. 
 
The palate is ramped up with luxardo cherry juice and peach nectar starting, and moving into big blasts of orange zest, chocolate covered almonds, and mature oak.
 
The finish is long and semi-dry with plenty of ripe fruits, barrel char, dried tobacco, mint-kissed chocolate and sweet oak.

Secondly we have a Single Barrel Tennessee Whiskey that is 75% corn, 13% rye, and 12% malted barley. Tennessee Whiskey meets all the same legal requirements as bourbon, which means it must be made in the U.S., must be made from at least 51% corn, and must be stored in new, charred oak barrels. Before barreling, Tennessee Whiskey must be filtered through sugar maple charcoal: the famous Lincoln County Process. That extra step removes certain esters and congeners, compounds that can make whiskey feel harsh, and in this barrel seems to give a more dessert-like experience. 
 
The nose leads with a dance between creamy caramel and fresh rye bread. Beyond that - candied orange and even dutch apple pie with buttery, streusel crumble. The fruitiness is crisp while sweetness is dense and inviting. 
 
The palate is a surprising mix of spiced melon, orange marmalade, smokey cherry, and a touch of licorice all beautifully wrapped up. It’s intense yet sweet, giving familiar nods to some of our favorite American whiskeys. 
 
The finish continues the mixed fruits from the palate, and brings in buttery oak, walnut, and a sweet smokiness, with a fun mix of olive and dry oak in the long finish. 
 
One of the most interesting craft pours of the year.
