Introducing Manifest Whiskey Project #3
|This is a project I've been working on since June 2020. I'm extremely excited to say it's finally ready to go! If you're not familiar, I did a similar project with Manifest back in 2017. I dive deep behind the scenes in this post. Ever since then we've been trying to locate something comparable to the original Manifest Whiskey project.
I was contacted by [undisclosed distillery] about some bourbon they had aging. This happens occasionally. I usually request a sample and pass it along to brands that I know would be interested. After tasting these samples I immediately called David at Manifest and took him a sample. It was the same candied cherry and maple notes we loved from MWP #1. After that, we started working on the new label. Because the product was in a 4,000-gallon American White Oak barrel we had to transfer it to Jacksonville in a tote. The Manifest Whiskey Project has always been a special one for me. We've taken our time (and sometimes too much time) to make sure we love the whiskey that goes in the bottle. We're not on a timeline or release schedule. But, when we find something we like we jump on it! I hope you also enjoy this bottle.

The Manifest Whiskey Project was created as a way to bring unique high-quality, sourced, aged whiskey to our consumers. It is a vehicle for us, as distillers, to blend and play with unique, limited whiskies.
This third release of the Manifest Whiskey Project is a collaboration with Seelbach’s craft spirits. We procured 315 gallons of a blend of 10-year-old and 3-year straight bourbon whiskey, which was solera-aged in 4,000-gallon foeder in Tennessee. On the nose, there are bright cherries, orange zest, and maple syrup, which progresses to cinnamon and candied cherries on the palate. It finishes with classic rye spice and raw almonds. This was aged a minimum of 2 years.
