James Bond never visited Canada, but if he did, we bet he'd have grabbed a bottle of this new Found North batch. For far too long Canadian whiskey was overshadowed by the Crown Royal's of the world. The truth is, some of the best whiskey is produced in Canada. Bottlers like Found North are now making those barrels available to whiskey lovers across the country. If this is your first foray into Canadian whiskey, you started in the right place. Though with the way the last few releases have gone, we aren't all that sure there are many new folks to the brand of Found North.

When Found North made Batch 006, they took 500 liters of that blend and filled a Spanish oak Pedro Ximénez sherry butt. They further matured the blend for an additional 8 months. While the original blend was made of a range of 17-26 year old whisky, with the additional time in barrel, the whisky matured into an 18 year old age statement. The resulting whisky was bottled at 129.8 proof with a grain ratio of 87% corn, 12% rye and 1% malted barley.
The focal point of Batch 007 is a 1998 vintage corn component aged in ex-bourbon barrels. The ‘98 contained a rich combination of sweet florality on the nose and thick, viscous caramel on the body. It lent the whisky elegance and presence. The ‘98 was complimented by a pair of 22 year corn components, one in ex-bourbon and the other in new American oak. The 22 year in ex-bourbon, allowed the fruit and floral notes to ripen, while the 22 year in new American oak added velvety tannins and lavish wood sugars. The corn composite was matched with a 2004 vintage rye in Hungarian oak. The rye bolstered the baking spices and enlivened the body of the whisky. At 131.8 proof, the resulting blend achieves balance without sacrificing oomph.
