Bull Run 8-Year Cognac

Bull Run private barrels are the Seelbach's Azalea bushes. They're beautiful...but seem to bloom at random! In our time, we've selected some incredible 13-year and 15-year straight bourbon barrels from Bull Run, in addition to some fantastic American Whiskey. It's nice to get back to a straight bourbon, this time cognac finished. Earlier this year we had a fantastic 10-year Cognac finished bourbon that didn't last very long, so we wanted to follow up with another barrel as soon as we could. From the Seelbach's 9-year to the Manifest Whiskey project to this 10-year, there has been no shortage of great, aged bourbons here on Seelbach's. Compound that with the Bull Run pricing, it's in the running for best values on Seelbach's.
The nose is bright cherry, red apple, fresh worn leather and a whiff of pipe tobacco.
The palate is bright and lively with raspberry, blackberry, grapes, cherry and powdered sugar, but creamy nougat and brown sugar moving thick and slowly as well. Great mouthfeel. Baking spices are softer placed in the glass but still bright like the citrus, leaning more white pepper, ginger, and cardamom. All the while, mature oak grows more prominent.
The finish is fresh oak, toffee, stewed berries, white pepper, toasted orange oil, and a bit of a French oak-esque drying char. Slightly funky fruitiness from the finish lasts even longer.
