Last yearâs release of Blue Note Honey Rye Cask flew off the site, and it didnât fully click for me why so many gravitated toward it until this year. After tasting the new 2025 release and looking for other comps on the market, I realized I couldnât find another honey-finished rye in the studio. Nearly every other honey-finished product out there uses a bourbon base, which possibly explains why so many people look forward to this one. Weâre excited to announce Blue Noteâs latest limited release - the 2025 Honey Rye Cask.Â

Blue Note Honey Rye Cask begins its journey by embracing the art of fusion. American oak barrels used for finishing are repurposed to produce a delicious, locally sourced, barrel-aged honey. We then return the whiskey to these honey-infused casks for another round of aging to create a distinct and harmonious profile. Blue Noteâs bold and spicy notes blended with the nuanced flavors of wildflower honey guarantee that with each sip, youâll enjoy an intricate balance of strength and sweetness.

This 116.49 proof, 95% rye is an excellent example of a spirit-forward finished whiskey that makes a heck of an Old Fashioned to boot. While perfumed, chewy, and sweet, thereâs a surprising juiciness to it compared to last yearâs batch.

The nose is rich and plump, giving a bit of sangria vibes with both red fruits and citrus in tandem, with a dense, mead-like finish.

The palate is rounded and deeply saturated, giving plenty of rich berries up front before salted watermelon, grilled peach, fried biscuits with apple butter, and lingering floral-infused honey with just a pinch of black pepper, vanilla, and rye spice.

The finish is soft and balanced, still kissed with honey, citrus, and spice before long-lasting spiced oak and plenty of juicy fruit notes.
