ASW Distillery Duality - Seelbach's Select
|There are few whiskeys that I taste these days that make me take a step back. But, the first time I tasted these ASW samples I was blown away. I typically go into barrel selections looking for specific notes. These ASW samples presented me with all kinds of unique notes. There was an overall sweetness with heavy leather and spice. I think this can all be attributed to the unique mash bill. All of those details are a little further down.
Mash Bill: 50/50 Malted Rye/ Cherry Smoked Malted Barley
Barrel: Barrel # 163; 30-gallon Charred New Oak
Proof: 106.8 proof
Age: 2 years, 4 months
Production/distillation method: We double-distilled it on our custom-built Vendome copper pot stills using the Southern-style grain-in method in which the grain solids continued from the mash tun into the fermenters and finally into the wash run of the still. All of this culminates in the world's first Double Malt
Yeast: Distiller's active dry yeast
Tasting Notes:
- Nose: dark chocolate, dark roast coffee, honeyed almond, nougat, hint of mint & tropical fruit notes
- Palate: chocolate-covered cherry, tobacco, Werther's Originals, a dusting of dry rub – pairs great with a light cigar
- Finish: Smooth, dry & lingering with a wisp of smoke
