I first met McCauley Williams in 2018 when he started a bourbon brand. I still joke with him about those early days. I passed on a pallet of his bourbon. As McCauley built that brand it quickly became, and still is, a product we couldn't keep in stock. Never make the same mistake twice! I was hooked on the Alma Del Jaguar (ADJ) quickly after being introduced. ADJ partnered with a 5th generation estate in Los Altos de Jalisco to produce a confirmed additive free, high quality tequila. It's the blueprint of a 3 ingredient tequila. Only agave, water and yeast are used in production. I've used their reposado as an entry point for dozens of bourbon drinkers that claim they don't drink tequila, but it seemed only fitting as we've expanded the Seelbach's tequila selection to select a bottle of añejo. On that same note, as we've only continued to see the demand for agave spirits rise, we decided to start a sister site dedicated solely to agave.

This Los Altos single estate agave spent 23 months in American Oak, and comes in at 103 proof. Additional production notes:

Distillation: Double Distilled
Still Type: Copper pots
Water Source: Deep well (244 meters)
This is an absolute treat - about as desserty of a tequila as you can get while still carrying plenty of core agave flavor. This should be an excellent release to cater to both bourbon and tequila fans.
The nose opens with fresh herbs, soft florals, banana liqueur, and cane sugar sweetness, then moves into gentle oak notes with hints of cherry and fig.
On the palate, a beautiful mix of coconut, butter, and tropical fruit arrives first, quickly met by a bold blast of cinnamon and black pepper. Vanilla cream follows, adding a lush layer that both agave and whiskey drinkers will appreciate, accented by torched citrus peel, tobacco, dried cherry, and a sweet yet funky earthiness.
The finish is long and trailing, with a cascade of sugary, buttery, peppery dark cherry sweetness that lingers on.
