A Toasted Turn for Dovetail

When we offered our most recent Barrell single barrels back in December, they didn’t stick around for long. The quick sell through was a reminder of why Barrell continues to be such a favorite here at Seelbach’s. When they put something new into the world, people pay attention.
Today, we’re excited to turn that attention toward Barrell Dovetail Toasted.
This release arrives as part of Barrell’s Black Label Series, a newer concept that takes the brand back to its roots. Extremely limited whiskeys, thoughtful experimentation, and cutting-edge blending techniques all come together here, showcasing the same philosophy that helped put Barrell on the map in the first place.
Dovetail has always been one of Barrell’s most recognizable blends, built around layered finishes and a balance of richness and structure. With Dovetail Toasted, the team took that familiar foundation and introduced toasted barrels into the equation, further refining the blend with 33 months of secondary maturation in toasted American oak. The result leans softer, rounder, and more expressive, while still keeping the fun and fruit-forward character that made Dovetail a favorite to begin with.
Rich and sweet-toned, but nuanced. It’s crisp, think sugar-dipped grapes, green apple spice, and dried apricot, yet it continues into soft, creamy vanilla notes familiar in toasted whiskeys.
The palate follows the same path, just more rounded and defined. Honey-dipped apples and buttery caramel lead, with even dried coconut coming into play the longer you sip.
The finish brings more structure, a culmination of jammy fruits met with toasted oak, cocoa powder, tangy balsamic fig, dried cranberries, and warm spice.
An elevation to the standard Dovetail, and one worth sitting with awhile to explore all its angles.
