The Senator #5 Barrel Proof - Selected by Seelbach's 104.74 Proof
Source: MGPI Distillery Lawrenceburg, IN
Mashbill: 95/5 Rye/Malted barley
Bottled proof: 104.74
Tasting Notes: The nose is initially a little dry with cocoa powder and a grassy note. It starts to round out with banana and rye bread. The taste has a nice sweetness. There are notes of charred caramel and maple. The same spice from the nose comes through as well. The finish is medium with notes of oak and black pepper.
About: The Senator is a part of the DC collection from Proof and Wood. Proof and Wood invests in and develops spirit brands. Their core business is sourcing and bottling fine American whiskies, but they also import other high-quality spirits from around the world that were not available in the US previously. Founder Dave Schmier is delighted to be able to create both cocktail-friendly bottlings for value-focused bartenders and high-end collectors’ editions for connoisseurs.
The name, Proof and Wood, comes from the two things controlled by a blender and finisher of fine spirits. The two things that are incredibly important to any spirit’s flavor: the proof it’s bottled at, and the wood of the barrel we age it in.
