Tasting Notes: Classic bourbon, and executed so nicely. Toffee, buttercream, big brown sugar, tobacco and cream. Rich on the palate, plenty of oak, honey, some faint light cherry and a big hit of pepper and clove. Waffle cone finish.
Stellum Bourbon Small Batch finds its flavor in the tension of three Indiana Bourbon mash bills, two of which are high-rye, with the third being almost exclusively corn. Older barrels from both Kentucky and Tennessee are folded in slowly, through a multi-step blending process. This brings added layers of depth and complexity, ultimately allowing us to round out a uniquely Stellum flavor profile. For Stellum Single barrels we were focused on finding the same depth and complexity to one barrel.
