Details: Barbados 9y Pineau des Charentes cask - aged 8 years in Barbados in bourbon cask, aged one year by Rolling Fork in a Canton low char rye whiskey cask, aged 5 months in a french oak Pineau des Charentes cask. This is a pot and column distilled blend of rum from FSD in St. Philip, Barbados.
Tasting Notes: The nose is rich molasses from the start. Light maple, deep waves of dark fruit underneath, and perfectly touched with smokey brown sugar.

 

Anise pops right away, like a beautiful marinaded jerk chicken. Holiday spices, thick port, and heavily charred vanilla bean.

The finish is long, creamy, and trailing with dark fruit and molasses. The finishing seems to control what could be an overly sweet rum and makes it one of the best experiences of the year.
