Mash bill: 75% Corn, 21% Rye 4% Barley
Tasting Notes: The age is present right away on the nose. Perfumed Dr. Pepper, a hint of sweet mint, buttered toffee, all transitioning into softer creamy sweet notes of boozy vanilla Coke float, chocolate syrup, and sweet earthiness.
The palate supports the nose notes. Lots of warming, mature oak, flat cola, brownie batter, and nipping spices that cant quite decide if they are root beer or oak tannin. At 104 proof it is dangerously crushable, while still having a chewy-leaning-creaminess to the mouthfeel.
The finish brings in all these Tootsie-Roll like chocolate candy notes, and a revisit to the more perfumed cola and oak from the nose.

One bottle I loved years ago was a low-proof, cask-strength single barrel from Smooth Ambler. I should've grabbed every bottle I could before the hype caught up to it. In today's whiskey world, high-proof and hazmat releases reign supreme. But I love a cask-strength release at an approachable proof point.
While there's no shortage of Indiana bourbons to try for Seelbach's, there are always some that stand out, and that was the case the first time I tried Onyx & Amber. 12-years old, 104 proof at cask strength, and under a 90 bottle yield... this is the perfect storm we love chasing.
