• Tequila plata produced at Cascahuin (NOM 1123) in El Arenal, Jalisco
• Maestro Tequilero Salvador ‘Chava’ Rosales Trejo
• Harvested from the El Chiqueño Rancho in the Valley of Amatitán, Jalisco
• Made from 100% Azul, aka Blue Weber (Agave tequilana)
• Cooking: Cooked in masonry steam ovens
• Extraction: combination of 70% steel roller mill and 30% traditional stone tahona
• Fermentation: Roller-mill-crushed agaves are fermented in stainless steel tanks | tahona-crushed agaves are fermented naturally using ambient yeast in open-air wooden tanks
• 2x distilled in stainless steel pot stills
• Proof: 46% ABV | 92 Proof

Flavor Profile: Earthy, peppery, and riddled with fruit notes.

• Nose: Fresh nopal, assorted peppercorns, orange zest, wafts of fresh aloe gel, & a faint note of rust (in a good way)
• Palate: Saffron, freshly plucked mint, peach fuzz, slightly green mango skin, and brown butter, with a long herbaceous finish.
