Tasting Notes: The nose is rich and full, bursting with jammy fruits, heavy brown sugar, and vanilla sweetness. It finishes with a gorgeous, slightly perfumed oak note. This is the kind of nose we’d more often find in 8-10 year Kelvin MGP barrels - powerful, dense, and incredibly inviting.
The palate unfolds in three acts. First, an energetic brightness with sweet cherry cola, candied green apple and blue raspberry suckers, and a touch of peach gummy rings. Second, plush caramel and creamy spiced vanilla take over, joined by subtle Cabernet tannins that nip the sides of the tongue. Third, a saturated wave of red fruits rolls in, supported by a slightly perfumed oak that becomes more buttery and dense as it lingers.
The finish extends naturally from the palate, introducing notes of dark milk chocolate and a soft, refreshing hint of mint. As it fades, it leaves behind layers of strawberry cotton candy, cherry slushy, and charred oak that linger long.

About: We’ve always chased what’s rare, but this barrel is a different level. This is a true 1-of-1: a Jimmy Red bourbon finished in Cabernet barrels. We first tasted this barrel back in 2024 and fell in love. But, the only problem was there was no Jimmy Red label for a cabernet finished bourbon. That is until now. This wasn’t just a special barrel, it was the first (and maybe only) of its kind.
You still get that signature earthy sweetness from the Jimmy Red corn, but the Cabernet finish brings in dark fruit and dry tannins that wrap it all together beautifully. It’s bold, structured, and incredibly well rounded at 123 proof. There’s not another bottle like it—and likely never will be again.
