Seelbach's Story: It’s always a great time to make the drive over to 13th Colony in Southwest GA, and this most recent trip came with a few surprises.
We often taste both bourbons and ryes of different ages and finishes, but there’s just something special about the aging environment down there. The heat and humidity in Southwest GA add matured notes you’d expect from a 10 to 12-year whiskey. During our blind tasting I guessed the first barrel was 8 years old… it was only 5. I was way off—but we were off to a strong start.
As we worked through the lineup, I kept coming back to two standouts. Barrel #2040 was full of burnt sugar, vanilla, and clove - all the rich flavors I love in a traditional bourbon. When we do barrel picks, we usually look for one of two things: either a flagship profile turned up to eleven, or something totally off-profile. This one was juiced. An easy first pick.
