The run is limited. We produce a mere 3,000 bottles (500 cases) per year. Our production collaborates with the angle of the sun and the seasons of the year. We set our schedule by Mother Nature and the maple sap har- vest. Maple sap runs slowly, but 100 Mill St Gin runs out quickly. If you miss the run you’ll need to wait anxiously until next Gin season.

We harvest 30,000 gallons of maple sap from 3,000 robust hard maple trees during Northern Wisconsin’s spring thaw season. We distill that into 750 gallons that is re-hydrated before adding a very specific yeast that sparks the 100 Mill St wonder via the grain-free and subtly balanced sugars provided by our maple trees.

Our Gin is distilled in micro batches of just 26 gallons. This focused attention allows us to finely tune and tweak our botanicals on a nano level. Adjustments made, craftsmanship applied to guarantee that our Gin delivers that unique 100 Mill St smoothness. As the vapors pass through our botanical basket infusing flavors within the Gin we give praise to Valor Cog Flora. Roughly trans- lated from its completely made-up origins, it means “Val- ue with Botanicals.” However, there is a secret message within this imaginary Latin phrase. Each consonant and vowel represents a different botanical added to our se- lected northern juniper—this secret coalesces to produce what is described as Umami. (Pssst, you can tell others.)
