Mash Bill: 75/13/12 Corn/Rye/Malted Barley
Tasting Notes: The nose is dark brown sugar and vanilla bean ice cream. Roasted coffee beans, dried cherries and leather begin to develop as the bourbon opens up. The palate is velvety and layer. Rich oak, toffee, Charleston Chew all build on the first sip. It's coating and viscous. As the mid-palate starts to take shape there's a note of dehydrated strawberry and fresh tobacco. The finish linger with toasted pine nuts, demerara syrup and sweet oak. This is the most complete and balanced whiskey I've blended.
The Story: Seelbach’s ECHO is our take on a "dusty" bourbon style. Back then, whiskey was usually put into barrels at lower proofs. It matured in air-seasoned oak and was reduced slowly, not all at once. We created that character by finishing this bourbon with 72-month air-dried oak staves. We also proofed the barrels slowly for six months. This allows the whiskey time to integrate and soften. The result is a lower-proof, double-oaked bourbon. It has a richer, rounder profile. Warm oak, vanilla, caramel, and baking spice come together. This blend offers depth and balance, reminiscent of America’s earliest great bourbons.
