December has been a marathon of releases, and we hope you’ve discovered some truly excellent whiskeys along the way. While we take a brief breather, we’re still rolling out a few standout new releases and re-releases, starting with one of the most popular estate-grown bourbons we carry. Whiskey Acres 7-Year Wheated Bourbon, bottled at 107 proof, remains one of our favorite craft offerings, delivering a flavor profile that tastes like an Oatmeal Creme Pie in a glass.
Just outside of Chicago in Dekalb, Illinois is the fifth generation family farm home to Whiskey Acres Distilling Company. Whiskey Acres is the first estate distillery in Illinois where they grow, harvest, mash, distill, and age all on their family farm.
This wheated bourbon is aged at least 7 years in 53 gallon, Char 3 Kelvin Cooperage barrels with a mashill of 75% corn, 15% winter wheat and 10% malted barley.
The nose is thick and creamy vanilla forward, immediately peeling away to baked apple pie with lightly toasted crust. After a few minutes sweetness changes to Derby Pie, with subtle smokiness.
The palate has great viscosity given the proof. Dark fruit wrapped grains, honey, oatmeal creme pie, lingering with spiced orange and walnut.
The finish is dry yet saturated, trailing silky with honey nut cereal, toffee, and candied fruits.
We also have the next release in their Cask Finished Series: a bourbon finished in Dunn Vineyards Cabernet casks. These freshly emptied barrels come from the award-winning Dunn Vineyards on Howell Mountain in Napa Valley and were used for an extended 32-month secondary maturation, a year or more longer than most finishes. This prolonged aging allows oxygen to slowly soften the tannins while preserving structure and balance. With tighter-grained oak and lighter toast levels designed to showcase the purity of mountain Cabernet rather than dominate it, these casks prove to be an ideal vessel for adding nuance and depth to the whiskey.
This 105 proof offering has a nose that is a berry-jam-bomb. Sweet, sticky fruit dominates the nose, with undertones of caramel and custard.
The palate showcases the heavy French oak influence with intense notes of mocha and wood spice that overlay with more subtle notes of vanilla pudding and peanut brittle.
The finish is long lasting with more wood spice and buttered cornbread.
Rounding things out is one of Whiskey Acres’ most sought-after releases, the 2025 Blue Popcorn Bourbon. Known for selling out quickly each year, this 97 proof batch blends four- and five-year-old barrels and features a unique mashbill of 75% blue popcorn, 15% soft red winter wheat, and 10% malted barley.
The nose is buttered popcorn, vanilla cream, honeyed corn, and light oak spice.
The palate brings sweet corn pudding, caramel apple, fruit candies, baking spice, and a creamy mouthfeel with gentle nuttiness.
The finish is medium length with vanilla, cornbread sweetness, and soft spice.
