Shortbarrel x Del Dotto Has Arrived

We've had a bit of a drought with Shortbarrel recently. Mainly because their releases don't seem to last more than an hour on Seelbach's. But that has us even more excited for this Del Dotto 2-pack! When Kentucky Bourbon and Kentucky Rye met Napa Cabernet, something unforgettable happened.

This new chapter in Shortbarrel’s Curator Series brings together two of Kentucky’s finest whiskeys - a 95/5 Rye and a 77/13/10 Bourbon  - and finishes them for two full years in Del Dotto “The Beast” Cabernet Sauvignon barrels straight from Napa Valley. It’s a meeting of craft traditions where rare barrels meet intentional blending.

The bourbon carries the familiar warmth and richness of Clermont, Kentucky, but with a layer of Napa polish. Lush black cherry and cabernet fruit roll across the nose, followed by vanilla cream, dark cocoa, and wine-soaked oak. As it opens, silky tannins and honeyed spice weave through a soft touch of leather, finishing with a texture that feels almost wine-like, a velvet cabernet in whiskey form.

The rye leans in a different direction, channeling its bold, spicy backbone through the same Cabernet barrels. Blackberry and plum meet rye spice and white pepper on the nose, before toasted caramel, dark chocolate, and cabernet tannins take hold. The palate is broad and expressive, with a dry, lingering finish that brings together dark fruit and deep spice in equal measure.

Together, these two whiskeys showcase what happens when time, terroir, and tradition collide. Each spirit stands on its own, but side by side, they tell a story of patience, precision, and creative blending.

The Curator Series was created to highlight collaborations like this: rare barrels, hand-selected lots, and a shared belief that great whiskey comes from both intention and experimentation.
