Seelbach's Amburana and Our First Bourbonr Private Barrel
|The original plan was to only release one Amburana batch. Then we'd follow up with a 9-year unfinished blend to compare it to. After tasting Batch 1 of the Amburana I revisited the two barrel blend of unfinished. I couldn't release it like that! It was still tasty. It didn't pack the complexity of the Amburana finish. Because of that I decided to test out an even short finishing time. Amburana is the smoke in a smoked old fashioned. A little goes a long way. If you overdo it, the drink is ruined. For Amburana Batch 2 we finished in a used cask for five days. It still adds that great pop of cinnamon and tobacco. The nuanced finish allows the dried fruit and baking spice to find balance. Included in this release is a Seelbach's Private Reserve single barrel. It's a 5-Year 7-Month bourbon from Bardstown Kentucky. As we expand this program we're excited to share a variety of barrels. I went ahead and bottled this one because I was worried about it. Every time I visited the warehouse I had to pull a sample it was so good. In a few more months there may not be much left to bottle!
