We've had two releases of Penelope Architect. Unfortunately for most, both blends were extremely limited and immediate sellouts. Whenever we got the opportunity to do a Seelbach's Architect blend I jumped at it! This blend was created on-site by Dee and Blake from Seelbach's as well as Frank Dobbins from Bourbon Your Enthusiasm. The blend then rested for 8 weeks with Intense Staves.
Architect is the new blueprint for precision blending. The first build in this series combines our signature four grain mash bill with two styles of French oak staves. Working in collaboration with Tonnellerie Radoux of France, the market leader in oak barrel manufacturing and innovation, we selected each stave using their state-of-the-art OakScan® process to construct a truly memorable flavor profile. After all, the best architecture leaves no room for error.

Blended Mash Bill: 77/6/14/3 Corn/Rye/Wheat/Malted Barley
Tasting Notes: The nose is almond husks, fresh cracked pepper (the fruitiness you get that balances the spice of the pepper) and cherries. Notes of raw chocolate start to come through on the backend. The palate is dried orange peel, dark chocolate and allspice. It finishes with a long herbaceous note. Lots of herbal tea, cinnamon and ginger powder.
