Limited Honey Bourbon Cask 🍯 + A New Blue Note Exclusive Blend

|

Blue Note Juke Joint remains one of our most highly recommended bourbons for those seeking exceptional value at a higher proof. In our opinion, a well-selected bottle of Blue Note can easily hold its own against higher-proof offerings from Buffalo Trace. We've been fortunate to work with some outstanding single barrels and private blends over the years, but as always the good ones don't last long. We are excited to be back with another Exclusive three barrel blend, and a limited stock of their Honey Bourbon Cask. These flew off our site last year, and we expect them to do the same this year. With such a limited allocation, we wanted to make everyone had a chance to get this release without the frenzy of a public lottery. We’re offering it as a 2‑pack so more folks can secure a bottle.

Blue Note Juke Joint Uncut Bourbon Whiskey Barrel 3BBL 117.8 Proof - Seelbach's Exclusive Blend

While Blake normally works on these Juke Joint Seelbach's blends, I was fortunate to be the one to give this latest 3bbl a go. After tasting through a few drafts and not being completely sold on the end result, I took 8 samples and broke them down into what I call low tones, mid tones, and high tones. The goal would be to find a barrel of each for a harmonious three barrel blend. This helped narrow down the combos considerably, as there was one high tone barrel we would anchor with, and a few earmarked mid and low barrels. From here we played with 7 different blend combinations, but mainly circled around two: one I internally called Pudding Pie and the other Sangria. The star of the blend was barrel 18774, one of the two oldest barrels in the bunch. while Sangria may have been the more cohesive drinking experience right out of the gate, the overall flavors of Pudding Pie, combined with a bit more depth, took the cake for me.

The nose is plush and inviting, with notes of creamy caramel pudding, warming leather, antique oak, champagne, and spiced apples.

The palate begins with a pop of sugared sweetness before moving into fresh cinnamon cake donuts from the fair. Spiced cream soda, red apples, and cherry cordial dance on the tongue, before churro, vanilla ice cream, and caramel sauce take over.

The finish features a medley of bright, candied fruits and more of that churro-like baked treat, with a dash of cayenne-like heat, as slightly smoked leather and sweet oak linger on.

Blue Note 2025 Honey Bourbon Cask

Blue Note Honey Bourbon Cask begins with a bold act of fusion. Once used to finish our bourbon, American oak barrels are repurposed to age rich, wildflower honey. These now honey-soaked casks are then refilled with Blue Note Bourbon for a final maturation, infusing the whiskey with deep, layered complexity. The result is a bold, spicy bourbon beautifully tempered by the smooth, floral sweetness of honey—a harmony of boldness and nuance in every sip. Crafted in Memphis, the new expression features a mash bill of 70% corn, 21% rye, and 9% malted barley, bottled at 113.86 proof (56.93% ABV), unfiltered.

The nose is creamy and light, this time with notes of warm cedar and soft cream soda. Underneath the softer aromatics are deeper notes of raspberry truffle and barrel char.

The palate begins plump and warming with fresh, spiced oak notes before a thick coating of honey to end the sips. Slightly effervescent, cream soda is even more present on the palate than the nose.

The finish is soft and begins to peel away layer by layer - first the spice goes, then the vanillas and oak, leaving a gentle honey sweetness continuing on with long lasting floral, tangerine, and Fruit Stripe gum.
