Collaboration is something we're starting to see more of from the brands we work with here at Seelbach's, and it just makes sense. It was the driving force behind our Rathskeller Revival label. So many brands make great products, but rarely find themselves in the same room asking, "What if?" Today's release is the result of not just asking that question, but actually making something happen.
New Holland barrels rarely last long on Seelbach's. Just over three years ago, thanks to the guys at Breaking Bourbon, we were able to offer the first-ever private barrel from New Holland Spirits. Since then, we've continued a steady, albeit small, cadence of releases from their Dragon's Milk Origin line. But today's release is something different, a true collaboration between New Holland and Breaking Bourbon: Dragon's Milk Origin: Orchard & Ash.
The process started with a question: What combination of finishing barrels could take Dragon's Milk Origin Bourbon's unique flavor profile somewhere it had never been before? And rather than rely on a single finishing barrel, the goal was to combine two or three different types to create something truly unique.

After exploring a wide range of possibilities, they landed on three:
Freshly emptied pear brandy oak barrels, expected to lend bright apricot and stone fruit notes.
Toasted Hungarian ash barrels, expected to layer caramel and oak with balanced fruit character.
Hybrid barrels with American white oak staves and Hungarian oak heads, expected to bring caramel and toasted oak.
But there was a fourth barrel that stood out. On its own, its profile was a bit too overpowering, with deep, rich oak, leather, raisin, and even a Cinnamon Toast Crunch note. Still, it was too interesting to leave out entirely. So they decided to top off the Kádár Lélek Hungarian ash barrel with about 10 gallons of it.
The New Holland team monitored the finishing process along the way, pulling samples from each barrel after three months for blending. From there, the Breaking Bourbon team worked through a wide range of combinations, adjusting proportions and gathering feedback from fellow bourbon fans to find what worked best.
The final blend was proofed down to 100, a decision driven by the balance of flavor, drinkability, and price. Ultimately, it was the sweet spot where everything came together to create what we think may be one of the most balanced and easy-drinking New Holland barrels we've offered on the site. And it's a whiskey that may never have existed without the right people in the same room asking "What if?"
Ripe pear and gooey caramel lead the aroma and are quickly joined by bright, juicy citrus. Toasted nuts and seasoned oak add depth, while a hint of cinnamon and chocolate malt balls round things out.
The palate is rich and bright, with deep caramel and dense seasoned oak forming the core. Juicy pear and dried apricot bring concentrated fruitiness, complemented by sweet brown sugar and buttercream frosting.
Light pear carries into the finish and is accented by nutmeg and pops of American and Hungarian oak. A lingering Hungarian ash note emerges on the backend and gives the finish a more distinctive, dynamic character as it fades.
