High Bank Distillery
|We've seen an increase in brands here at Seelbach's coming out of various parts of Ohio, and all with exceptional products. High Bank Distillery was founded in 2017, but been making quite a splash with their spread of whiskeys - including being named Best Blended Whiskey in the San Francisco World Spirits Competitions the last three years in a row.
After their 2023 win, Master Distiller and co-founder Adam Hines had the following to say:
"My goal in starting this distillery, just 5 years ago, was to be seen as comparable products to the big names in the spirits industry. I did not want to be just good for a distillery in central Ohio.
We want to continue to tell the story of Whiskey War, a product that is crafted for the masses. I have always worked for our distillery to make uncompromised yet approachable spirits. These awards show that our spirits are created with a passion for consistent flavor."
We are excited to have an array of their whiskeys here at Seelbach's. I've been impressed which each one of them - from their 88 proof to their Double and Double Double Oaked, to their Midnight Cask which immediately became of my favorite finished whiskeys I've had so far this year.
Whiskey War 88 Proof
Soft pepper and rye spices with creamier notes of chocolate malt.
The palate is baked apples, dried fruit, and vanilla toned herbal notes continuing on. Lots of cocoa powder in a long, rye spiced finish.
For the proof, this packs a ton of flavor. An easy go-to for someone who likes a bit of spice to their pour like Old Grand Dad.
Whiskey War Barrel Proof
Fresh ripe cherry, candied ginger, orange oil, wintergreen, creamy vanilla and caramel sauce all greet you in the aroma.
The palate is a big blast of rye spices, with pepper and candied mint at the helm. Continued sips reveal more maraschino cherry, brown sugar, chocolate syrup, and candied ginger.
The finish is clove-forward, with black pepper, leather, ginger continuing on into a long chocolatey, charred wood linger.
Midnight Cask Barrel Proof
This may be the most buttery noses I’ve ever smelled. Lots of plum and raisin.
The palate is like cutting into a juicy steak. Rich and buttery with slightly savory pepper mixed with these deeply thick port fruit notes with explosive juiciness.
Lingers with great chocolate and oak.
Whiskey War Double Oaked
Oak, leather, baking spices, mint, citrus. a heavy handed demerara old fashioned concentrate.
The palate leads with creamy yet toasted rye spice, leather, and lemon oil.
The finish is long, dry, and spiced like a leathery Manhattan.
