Native Texan, Nelson Ingram, jumped at the opportunity to move to Kentucky and work in the bourbon industry at one of the largest and most famous distilleries in the world. After years of learning, Nelson knew it was time to start his own operation, but he wanted to do something new; something that hadn’t been done before.
 
He searched for the perfect aging environment to build his warehouses. After an extensive climate study searching for a humid environment with warm winters, Nelson happily selected College Station, TX. He then began scouring the United States in search of barrels that would optimally age in this unique sub-tropical climate.
 
Nelson completed his team by adding Evan Brewer, a previous head distiller with 10+ years of maturing and blending whiskey in the state of Texas, and Halle Trefzger, a veteran sales leader with a decade of industry experience.
Together, they are aging whiskey in this unique environment and blending to create novel & unique bourbons. Now that’s Unreined.
 
For their 6-year Four Grain Bourbon, they start with a low rye Kentucky bourbon, blend in two different wheated bourbons (from both Kentucky and Texas) to soften the rye spice and add fruit notes and add dessert notes, then blend in some Kentucky high corn bourbon for additional sweetness and cohesiveness.
 
Unreined Four Grain Bourbon Whiskey
 
The nose is soft cherry, plum, nougat, and even a drizzle of maple syrup over yellow cake, followed by light sweet oak.
 
The palate is coating for the proof, opening with red apple, soft cherry, and apricot before moving into spiced nougat and light sweet oak that grows more prominent into the finish.
 
Slightly more mature oak and baking spice emerge, yet the profile remains pleasantly soft and easy to drink, with a lightly syrupy texture that reveals more cherry, banana, maple, and light chocolate the longer it sits.
 
Unreined Full Proof Bourbon Whiskey
 
The nose is Pecan praline and rich caramel lead, softly buttery with plenty of confectionary sweetness.
 
The sip follows suit, opening with pecan praline before moving into nicely rounded cherry and fig notes, bright orange peel, and layers of caramel and sweet oak. The spice begins to build, then mellows into a soft cinnamon strand, making this especially pleasing for someone who enjoys a touch of spice but still wants a plush, comforting profile.
 
The finish is reminiscent of Derby pie, with gooey caramel and pecan layered alongside semi-sweet chocolate, underlying dried fruit, and a final note of spiced oak.
