We are excited to announce that Beyke's Blue Batch 02, and Beyke's Blue Double Oaked Batch 01 are now in the warehouse and shipping.
 
The excitement around this Kentucky blue corn was larger than we initially imagined, and after a rather quick sell through of Batch 01 we knew we had to get a second batch in the works. In keeping with our goal of finding the best proof for each batch, Batch 02 landed a bit higher than Batch 01 at 118 proof, bringing a wave of rich fruitiness with it. It shows a slightly brighter side than our first batch, but with a couple drops of water can ease into the flavor profile we've grown to know in the original blend. 
 
Sweet vanilla opens the nose alongside a sweep of orchard fruits. Stewed green apples move into crisp red apple and even a juicy peach, with black raspberry and a soft hint of leather lingering on.
 
The palate is full and coating, with leather surprisingly arriving first. A twist of caramel and barrel char follows before it settles into cooked fruits, a touch of allspice, candied lemon, brown sugar, and plenty of sweet oak.
 
The finish is a blend of spice-caressed toffee and cocoa powder, with raspberry and sweet oak continuing through a creamy lemon meringue note that lingers the longest.

After the first release of Beyke's Blue, it felt natural to begin working on a Double Oaked version. Not because of its popularity, but because of how full and expressive the flavors of this blue corn already were. We wondered if we could create a whiskey that previewed the trajectory of its flavor as it continues to mature. To explore that idea, we began a series of experiments.
 
As soon as the barrels first landed, we put a portion into Zak Cooperage barrels with 72-month air dried staves. I have always loved the bold, deep flavors that can come from Zak, so it was an obvious direction to explore. After we dumped our first batch of standard Beyke's Blue, we also took some of the remaining proofed and blended whiskey for backset blending, filling a Speyside Char 3 barrel. Even after a few months, you could tell it was picking up warmer spice and vanilla notes that lean more traditional for double oaked bourbon.
 
We began tasting through our stock to identify barrels that carried the beautiful fruit notes we have grown to love in Beyke’s Blue, while also offering the structure to marry well with the additional oak influence. Each barrel delivered its own lovely character. Yet we quickly realized that the harmony of these components together offered a far more complete drinking experience. Our goal was a whiskey that nodded to the classic double oaked profile while still remaining unmistakably Beyke’s Blue.
 
There were several iterations of what could have been this first batch of Double Oaked, though each circled the same pocket of flavor. As we landed on the final three barrels, we also knew, just like the original Beyke's Blue, that balance would come with a small lift of proofed water. What began at 120.7 proof came alive at 118 after a few slow weeks of proofing with barrel-rested water for improved flavor development. The result builds confidently on what you know and love from the standard release, while offering an extra layer of richness and depth that hints at what this blue corn can become.
 
The nose is rich and powerful with mature sweet oak, baked blackberry cobbler, and dried spiced cherries. Underneath, waves of vanilla cream soda and cocoa mingle with a hint of mulled wine and caramelized toffee.
 
The palate strikes a confident balance between powerhouse oak and vivid fruit. Brandied cherries and char-kissed Granny Smith apple come wrapped in warming spice. The double-oak influence deepens with each sip, shifting from toasted marshmallow sweetness to polished wood and cigar-box warmth.
 
The finish is assertive and unhurried. Ribbons of blackberry jam, brown-butter toffee, and dark chocolate roll over toasted fruit from the palate. It lingers with a satisfying grip that reminds you exactly why this bourbon wears its double-oak proudly.
