Today we are back with something brand new from the team at Dancing Goat. From the Sourced Whiskey Series to their annual release of Limousin Rye, what all their releases have in common is a commitment to delivering delicious whiskey expressions at unbeatable value. This continues with the release of Stillman's Sonder 10-Year Straight Bourbon.
The Dancing Goat Team embarked on an eighteen-month journey of analysis, blending, re-entry testing, gauging, finishing, re-blending, and re-gauging—to take the most choice barrels from their elusive aged stocks. Stillman’s Sonder is a whiskey that is polished and reimagined. It is made by committee and by generational knowledge and responsibility.
From 2010 to 2016, distillation at MGP in Indiana included a series of large exploratory test runs, and ultimately orphaned barrels. The Maas Family carefully collected these barrels in secret until their stocks grew and aged to a point where a 10+ year aged whiskey could be blended and produced with consistency and growth.
The 10-Year Straight Bourbon Whiskey utilizes both Andean and American oak aged barrels with texture and concentration pushed through several double oaked components. Spoon proofed in barrels at times with encouraged oxidation through short fills and vatting, this is a remarkably expressive bourbon crafted through extreme care and reflection, and at 94 proof makes a fantastic sipper.
Vanilla cake donuts, Frangelico, and freshly baked blueberry muffins lead on the nose, creating one of the more unique aromas I’ve had in a while. It’s dense for 94 proof, with continued nods to anise, raisin, and Dole Whip soft serve.
The palate is plump and chewy, with root beer float, Cherry Coke, and stewed berry compote laying thick and creamy on the tongue. More dense than effervescent, there’s still a cola-like tingling that carries into slightly antique sweet oak, along with a touch of medicinal cherry, lingering blueberry, and powdered sugar.
The finish leans into dark chocolate and deeper berry notes, as soft toasted oak warms things up slightly, lingering with vanilla cream and a touch of torched orange peel.
