We are coming to the end of our barrels from our pick in July at Starlight distillery, and saved some of our best for last.Our Amburana finished Rye from the other day came in went quickly, so we are excited to have not only another first-fill Amburana finished bourbon, but an Amburana rum finished bourbon. This barrel spent three batch cycles for previous Amburana bourbons, then held a Barbados rum for 6 months, before its fifth fill again with this bourbon that got bottled.Does double the finish mean double the flavor? Indulgent breakfast pastry, tropical fruit cocktail, and slightly smoked oak fill the senses.
The palate is a touch more savory than some other amburana finished barrels we've done - freshly cracked pepper, clove, honey glazed ham, and toasted cinnamon roll.
The finish is long and dry with the savory spices and heavy char continuing on.

The nose is French toast with a heavy hand of maple syrup and a dollop of whipped cream. The amburana influence is subdued, while the rum focuses the sweetness.
The palate is bourbon forward no doubt, but definitely emphasized with brown sugar sweetness. It’s chewy, with a depth more like a honey finished whiskey before beautiful tropical fruits and complex spices.
The finish is long, perfumed, and trailing, sweet but never forgetting its charred oak foundation.
For those that aren’t afraid of a sweeter bourbon and interested in amburana but always find it a bit too intense, this just may be your perfect companion.
