This special single barrel is a collaboration between High Wire Distilling Co. and Matthiasson Wines, longtime friends and like-minded beverage makers exploring terroir through sustainable agriculture. This remarkable expression is crafted by finishing Jimmy Red Straight Bourbon Whiskey in Matthiasson Napa Valley Red Wine barrels for four years creating a complex spirit with notes of sweet citrus, caramel, rhubarb, and baking spice.
Tasting Notes: On the nose, a burst of black currants, honey, and a layer of dehydrated strawberries that give it a dried, concentrated fruit sweetness. A touch of maple sneaks in, alongside something that reminds us of rhubarb pie, sweet but still bright. The palate opens bright and sweet, with dark caramel richness cut by citrus that keeps it lively. As it moves to the mid palate, there’s a spike of freshly cracked black pepper that pops. It has a velvety mouthfeel with orange marmalade spread over warm pie crust. The finish ties everything together: It lingers with that mix of sweet fruit, pastry, and spice, pulling you back for another sip.
