Tasting Notes: The nose is rich and powerful with mature sweet oak, baked blackberry cobbler, and dried spiced cherries. Underneath, waves of vanilla cream soda and cocoa mingle with a hint of mulled wine and caramelized toffee.
The palate strikes a confident balance between powerhouse oak and vivid fruit. Brandied cherries and char-kissed Granny Smith apple come wrapped in warming spice. The double-oak influence deepens with each sip, shifting from toasted marshmallow sweetness to polished wood and cigar-box warmth.
The finish is assertive and unhurried. Ribbons of blackberry jam, brown-butter toffee, and dark chocolate roll over toasted fruit from the palate. It lingers with a satisfying grip that reminds you exactly why this bourbon wears its double-oak proudly.
Story: My dad used to tell me stories about growing up in western Kentucky and working the farms. That wasn’t my experience—but a few years ago, it all came full circle when I saw a truckload of Beyke Farms corn being delivered to a distillery. It might’ve been a small role, but knowing my family had a hand in the whiskey industry was fascinating.
Fast forward to today: working with Seelbach’s has introduced me to whiskeys from all across the U.S., and one thing I’ve become obsessed with is a specific heirloom grain—blue corn.
I’m excited to introduce a well-aged, well-crafted blue corn whiskey, made right here in Kentucky.
