Starlight Hungarian Double Oaked & Bourbon Single Barrels

Starlight is simply one of the best in craft whiskey. Coming off the excitement of several limited 10-year releases, we thought it was the perfect time to return to what made us fall in love with them in the first place, because when the formula works this well, why to change the playbook? Today we are back with 7.5-year Hungarian Double Oaked Bourbon and a dynamite 5-year Single Barrel that reminds us why Starlight has become such a mainstay at Seelbach’s.

Starlight Distillery Single Barrel Bourbon #22-2318 119.4 proof

Up first is a 119.4 proof, 5-year 3-Grain (60% Corn, 20% Rye, 20% Malted Barley) bourbon that is like a bourbon cream soda in a glass. 

The nose dances a bit, giving up notes of orange Tootsie Pop, Mug Root Beer, and A&W Sparkling Vanilla Cream Soda.

The palate follows similarly to the nose, beginning with sweet oak and orange-infused milk chocolate. A touch of effervescent root beer spice builds into a plush, creamy layer of toasted vanilla.

That vanilla creaminess lingers long into the finish, bringing in subtle rounded red fruits before circling back to darker fruit tones, charred oak, and a root-beer-esque bite.

Starlight Distillery Double Oaked Bourbon #24-8083 115.3 proof

This was a blend of both 3-grain and 4-grain mashbills, finished 7 months in Hungarian Oak. It also happens to be one of the oldest Starlight bourbons we've released. The result is one of our favorite double oaked releases all year. 

Softly charred oak, rich vanilla bean, and cherry skin lead in an inviting swirl of chocolate and caramel pudding pop on the nose.

The palate carries rich notes of chocolate-covered blueberries before moving into spiced vanilla custard and raspberry jam. It feels much deeper than expected, as seven years of age start to stack up layers worth unpacking.

The finish leads with silky milk chocolate and beautiful oak before giving way to rich red fruits and tiramisu.
