This week we celebrate seven years at Seelbach's! It's almost unimaginable to think about how much things have changed in those years. Not only from a personal aspect but also in the whiskey world. I never dreamed we would see such enthusiasm for craft spirits like we do today. And it continues to grow. For that, I can only say THANK YOU. This doesn't happen without our Seelbach's fan base. Thank you for giving us a chance and trusting us with the bottles we sell. Now onto this blend.
To celebrate our anniversary, I wanted to bring back the 15-year. It's a special product, and it's been 7+ months since our last release. I hope you enjoy this bottle, and cheers to another year of "Unlocking Craft Spirits"!

Tasting Notes: The nose opens with a bright, fruit-forward bouquet. Think cherry compote, wildflower honey, and cantaloupe. Beneath the initial sweetness, there's a soft thread of rosewater and dried herbs. As it opens, richer notes of caramel and baked stone fruit appear. They balance with a hint of worn leather and sun-dried tobacco.
The palate is lush and velvety, with layers of flavor that build slowly. Warm caramel sauce and vanilla cream lead the way, followed by honeyed peaches and a splash of ripe melon. There's a delicate floral bump. Orange blossoms and chamomile tea that add brightness. Mid-palate, toasted almond, black tea, and soft oak create structure and depth. A hint of chocolate and toasted coconut adds a velvety finish. It's like an Almond Joy as it hits the back palate.
The finish is long with a lingering sweetness that never turns cloying. Hints of blackberry jam, sugared citrus peel, and buttery pie crust.
