Tasting Notes: The nose is fruity with notes of raspberry and toffee. It's sweet with a balanced of aged leather. On the palate, there is tangerine, lemon oil and caramel. The fruitiness of the Starlight rye balances with the rum undertones. There is a little molasses on the palate. It shows up as more of a sugar cane syrup note. The spiciness is vegetal. It's like the hot pepper spice instead of the normal black pepper. The finish is long! The caramlized sugar and leather notes shine the brightest.
About Starlight: Starlight Distillery is a family-owned distillery in Starlight, IN. The distillery started out as a family farm in 1940. It's had multiple evolutions over the years. In 1978, the Huber's started their winery. Then in 2000 the Huber's took the next step and received approval to open the distillery. Starlight is farm-focused and produces many single-origin products. I think they're the only distillery I know that is a working farm, orchard, market, tourist destination, winery, banquet hall, and distillery!
