Tasting Notes: The nose is initially brown sugar and black pepper. It opens with a softness on the palate but picks up the spice quickly. You're hit with a nice punch of cinnamon, roasted red peppers and dried cherry. The finish keeps the spice coming. The proof is a nice reminder as it move to roasted peach and oak.
About Starlight: Starlight Distillery is a family-owned distillery in Starlight, IN. The distillery started out as a family farm in 1940. It's had multiple evolutions over the years. In 1978, the Huber's started their winery. Then in 2000 the Huber's took the next step and received approval to open the distillery. Starlight is farm-focused and produces many single-origin products. I think they're the only distillery I know that is a working farm, orchard, market, tourist destination, winery, banquet hall, and distillery!
