Tasting Notes: This is black pepper and burnt orange peel on the nose. Caramel starts to develop on the palate. It balances with more spice and cloves. This is a heavily spiced bourbon. It pulls nicely from the barrel char and oak. The taste moves nicely to a superb finish. It really shines at the end. There are notes of cardamom and black tea. Then it transitions to honeysuckle. The finish is long and complex.
About Starlight: Starlight Distillery is a family-owned distillery in Starlight, IN. The distillery started out as a family farm in 1940. It's had multiple evolutions over the years. In 1978, the Huber's started their winery. Then in 2000 the Huber's took the next step and received approval to open the distillery. Starlight is farm-focused and produces many single-origin products. I think they're the only distillery I know that is a working farm, orchard, market, tourist destination, winery, banquet hall, and distillery!
