It leans toward the confectionary, with brown sugar syrup, maple cream, and fig jam bars, but as it continues to unfold, it never strays too far into sweetness. Soft cherry, whispers of leather, and sweet charred oak begin to take hold, bringing a lovely sense of nuance and balance.

The palate erupts with flavor. It begins rich and jammy, clinging to the sides of the tongue with the dense sweetness of date syrup and a layered, beautifully balanced medley of baking spices. With each sip, the fruit deepens into ripe plum dusted with cocoa powder, while spiced toffee grows increasingly sticky and indulgent, lingering across the palate.

The finish is velvety and coating, still dancing with vibrant fruit and citrus, almost like a bowl of freshly poured punch. Slowly, that brightness gives way to a drier, more contemplative character, with spiced vanilla custard, damp oak, and a lingering touch of mature wood.

https://seelbachs.com/products/high-wire-distilling-jimmy-red-single-barrel-bourbon-1172-118-2-proof-selected-by-seelbachs
