Dancing Goat Distillery "The Spaniards" - Entry Proof Podcast & Seelbach's
Dancing Goat Distillery "The Spaniards" is a 7-year-old corn whiskey from MGP (Ross & Squib) finished in toasted & charred Spanish oak. This particular whiskey is the product of the sourcing and blending prowess of Nicholas Brady Maas at Dancing Goat Distillery in Cambridge, WI. The Spanish Oak is very soluble and lends lots of rich oak and tannins to what was previously a very sweet and light distillate. The finished product is rich & smoky with a nose that'll remind you of cigars, bar-b-que sauce, & bourbon cherries. The palate hits you upfront with big sweetness, then you're met with cedary oak and figs that carry over to notes of a burly red wine, nutmeg, and black pepper. The finish lasts for days with the oak, wine notes, and black pepper, and a touch of smoke dancing across the back of your palate.
