Tasting Notes: The nose opens up with orange peel and black pepper. There are notes of dried apricot and caramel. The palate is the same crème brûlée from batch one. However, there's an additional Christmas spice that I love. The cinnamon and cloves really shine as the whiskey moves back to the palate. The finish is long. There are notes of peanut brittle and oak. It gets slightly spicier on the finish. However, it never shows it's 115 proof.
The Story: For Seelbach's Batch 002 we started with the same base blend as batch 001. You can read that full breakdown here. I wanted this batch to focus on the French Oak influence. I took about 30 gallons from the original Batch 001 blend and 25 gallons of the unfinished blend. This mix went back into the used toasted French oak barrels for 90 days! The addition of this to the final blend was incredible. It added more depth and complex spice notes. The Seelbach's Private Reserve motto is "an experiment in fine bourbon". This blend embodies that. Even though the age and finishing barrels are identical to Batch 001, this is a completely different whiskey. It showcases what can be done through the use of finishing barrels and blending techniques.
