For the inaugural release, Eaves spent weeks with 291 team sampling their Colorado bourbon which is finished with Aspen staves. From there she married her ideal version of 291 Colorado bourbon whiskey - the end result was the special 291 “E” Eaves Release, a 129.6 proof bourbon whiskey with a smokey sweet grain and oak, floral and fruit essence. This release carries subtle green vegetal notes balanced by sweetness and dark spice.
“Blending is as much of an art as is distillation,” said Eaves. “I want people to taste this release and know this is Colorado whiskey. This is 291.
