Tasting Notes: An aroma that fills the room as soon as it hits the glass. Caramel, dried cherries, sherry and brown sugar. The palate is viscous. It pops with allspice and fruit cake. I almost thought I pulled the Jimmy Red port finish on accident when I sat down to do this review. The finish is medium and has some nice dried mango notes. Slightly fruity but with a little bit of spent coffee grounds to finish is off.
About This Barrel: From one of our farms in the ACE Coastal River Basin, the heart of the low country. Barrel entry date 6/21/2018, barrel entry proof 110.3. The ACE basin is named for the three rivers that form this basin, the Ashepoo, the Combahee, and the Edisto, emptying into the Atlantic around Edisto and Hunting Island.

Tasting Notes: Charred cherries with mint. This one is funky! Lots of earthiness mixing with fruity notes. There's a little bit of a smokiness. At points it tastes like the beginning of a peated scotch pour. Then it moves to notes reminiscent of apple brandy! The mouthfeel is fantastic as it coats the palate with warm Christmas spice.
About This Barrel: From one of our farms in the Pee Dee River region, further inland. Barrel entry date: 8/9/2018, barrel entry proof 109.7. This barrel is part of a series of yeast trials we did around this time, and features an alternative to our typical house yeast.

There were only 2 cobs of Jimmy Red corn left after the last man known to grow it passed away. His family gave the seeds to Ted Chewning and he was able to bring it back to life. From two ears in 2013 to an estimated 250,000 lbs in 2017 the production on Jimmy Red corn has exploded.
High Wire Distilling in Charleston, SC began playing around with this corn in 2014. This bourbon is an incredible example of how heritage/heirloom grains are changing craft spirits. Craft distillers are using them to redefine the spirits we love.
With heavy nutty and sweet notes Jimmy Red corn creates a unique and warm flavor profile. The high oil content of the corn provides creamy and rich mouthfeel.
