All praise aside, Old Elk started at MGPi. They started by recruiting Metze to create a custom mash bill for their bourbon. The palate is syrupy with notes of star anise and cloves. There is a subtle herbal note but not minty. It's has a smoked meatiness too it that I haven't found in many rye whiskies. It drinks way under it's 125 proof. And throughout my whole career, all the mash bills I produced always had some degree of rye, to give you that spice characteristic, which takes a minimum of 15 percent. From there, it was reverse math. Sweet forward with crisp green apple and a sweetness similar to biting into a honeydew melon close to the rind. Bright, fresh, and welcoming with plenty of brown sugar and oak.\u003c\/li\u003e\n\u003cli\u003e\n\u003cstrong\u003ePalate\u003c\/strong\u003e:  The palate is equal parts honey-dipped apples and stone fruit as it is chewy toffee and oak. The mouthfeel here is excellent, and the balance of flavor too. All praise aside, Old Elk started at MGPi. They started by recruiting Metze to create a custom mash bill for their bourbon.
