Mammoth 12-Year Small Batch Rye has an assertive and complex aroma with notes of honey, lightly toasted rye bread, dried grass and rick-house. Mouthfeel is clean and dry, with light tannins and low viscosity. Finish is medium-long with clean, lingering heat.
Capturing the Character of Rye and the Purity of Great Lakes Water
This release of 12-Year Northern Rye Whiskey was blended from a selection of eight casks ranging in age between 12 and 15 years old. These particular casks were chosen for their appealing range of attributes derived from the rye grain itself, including grassy aromatics, floral sweetness and a medium-light viscosity. Each of the eight whiskeys were matured in second- and third-use bourbon barrels, with cask strengths ranging from 126.4 to as high as 141.6 proof. After selection, they were married in a stainless-steel blending tank and left to integrate for three months and slowly brought down to bottle proof with reverse-osmosis, de-ionized water from the Great Lakes.
Blending was purposefully conducted in a stainless-steel blending tank, rather than low- to medium-active casks, to maximize and protect the complex grain character. A range of bottle proofs were explored, with our distillers settling on 112 to best express those grain qualities. Drink straight, or add water to your glass until you find your desired strength. If you do choose to proof the spirit, notice the aroma, taste profile and viscosity also change in the process. Finally, as some of the lighter aromatics may slowly dissipate from your glass at room temperature, it’s unlikely the first and last sip will be identical making for a thoroughly enjoyable tasting experience.
