Manifest Distilling Smoked Bourbon Barrel Project

Finish: 30-days in an ex-bourbon barrel smoked with applewood
Tasting Notes: Light cigar tobacco, orange crush and vanilla custard. The re-barreling added loads of depth to the nose. There is a little bit of black pepper. The palate is roasted black pepper and coriander. That gives way to a little bit of caramel and almonds. The finish moves fast but leaves you with a little bit of cinnamon and white tea.
This barrel started off as a bourbon fueled brain storming session. Manifest Distilling had a couple of extra barrels of 4-year old MGP from a prior release. I pitched the idea of smoking an empty barrel and then refilling it with bourbon. I typically don't enjoy smokey whiskey. However, this seemed like a great way to get some subtle smokiness into a spice forward bourbon. The results were better than expected!
